This topic has been covered many many times, read thru some older post and try a search too, tons of good info on here.
I use the "fish finder rig" or slide style rig for drifting. Weight can vary a lot depending on current, wind, etc... we hook our live herring thru open mouth and out top. I prefer circle hooks but j-hooks are fine.
A drift sock can be a huge asset to control your speed too. Throw on the bait runner and put rod in the holder. We try different depths and let the fish tell us where they are holding.
A good depth finder is nice to have to keep an eye on contour changes and structure. Want to make sure you are not dragging bottom , or you'll be going thru a LOT of gear with the snags out there.
That's it in a nut shell. A lot of trial an error.
