Default recipes - how do you cook this coarse fish?

How do you cook this coarse white fish? A friend gave me 5 packs and I have butter, herbed, lemoned and broiled - so-so - not great. I have baked with cream of mushroom soup - not much of an improvement. I have three more packs - HELP!

Default Beer Battered white fish (Heavy on the Beer)

Heat vegetable oil in heavy skillet. Lightly coat fish with 3 to 4 tablespoons baking mix. Mix 1 cup baking mix, egg, salt, and beer until smooth. Dip fish into batter, letting excess drip into bowl. Fry fish until golden brown, about 2 minutes on each side; drain. Makes 3 to 4 servings.

Drink all leftover beer.

Recipe Per 3 pounds of fish -
Beer Battered fish (Heavy on the Beer)

One fish gutted and scaled
1 lemon - sliced thin
1 sweet onion - sliced thin
coarse salt

Clean fish, make 3 or 5 large slashes across each side of the fish and rub butter into slashes. Rub cavity with butter, salt, and pepper. Stuff with 1/2 of the lemon slices and onions. Lay out a layer of onion and lemon slices the size of the fish. Place the fish on them. Cover top with the remainder. Seal tightly in foil pouch, leaving a small opening at head. Pour beer into the opening and seal. Bake 45 minutes to 1 hour at 325 F. Serve with rice.

How inappropriate to call this planet Earth when it is quite clearly Ocean.
