Default Marinara sauce from my family to yours!

Ok guys if you need a marinara sauce this one is hard to beat

Pour olive oil in a large pot to cover the bottom. Saute chopped garlic in the oil.

Add:
1 (28oz) can tomatoe puree And 1 can water
1 (28oz) can crushed tomatoe And 1/2 can water
use the following spices sparingly as we will add more later
salt/pepper
garlic powder
basil, parsley, oregano
a dash of ground cloves (my Great Grandmother always did!)
a little red hot to liven it up

Simmer for a few hours, stirring once in a while. Add above spices along the way and test by dipping (italian) bread in it. If you add meatballs to your sauce it will eventually thicken, just add some water and time to simmer in.

Try on spagetti, stuffed shells, lasagna, etc. If you think it's good, let me know, and I might be able to find the meatball recipe too!

Want my meatball recipe?
2# ground meat
1# hot Italian sausage
2 eggs
1.5c bread crumbs
1T Italian Seasoning
2TGarlic powder
2TOnion powder
1/2c Parmesan/Asiago cheese (Combination I use for topping pasta)
1.5c shredded mozzarella
The above measurement are approx. I eyeball everything
Preheat oven 350
Mix everything above with hands until uniform
I usually place 1#meat and 1/2# sausage in bowl add add spices and egg then top with rest of meat before mixing
roll into balls place on cookie sheet on center rack
bake for 7 min turn and bake 5 more
remove from oven and place in sauce
simmer 2 hours

That sounds like a good meatball recipe. The only thing I do differently is fry them in olive oil, and I don't add sausage or mozzerella, but again it's all about taste. When I fry them I look to burn the outside somewhat, because simmering them in the sauce soaks up moisture and they soften. And make them small like Great Grandma did! About the size of a Double D's munchkin. The big ones just don't take in the flavor of the sauce.

I always use ground veal and pork in my meatballs as well.

Interesting, are you a chef perhaps? You really know your cooking. :)
