Default Bunker - de-bunked?

Ok, complete newbie here and I have a question for all the surf anglers. What is the proper size and proper way of baiting a piece of bunker? Small, large? Through the skin? Would the same apply for when fishing from a boat?

Through the fleshy part up top exposing the hook point about 1/8 of an inch.
Yes - When using the head put the hook through towards the rear -
throw the tail section away or use it for bluefish.
