Very simple
Cut striper into chunk steaks. Mix 1/2 fresh lemon juice and tsp thyme in Virgin olive oil. Coat steaks completely . Dip steaks in flour . Barbecue on skin side 7 minutes. Turn over two more minutes. Soak corn in bucket of saltwater. throw on barbecue and shuck after its cooked. Use the oil as seasoning for corn . No need for butter. 8)
Recipe from brooklyn cookin. It is delicious.
Must be eaten with my venizon stew for full effect.  Beef can also be used.

What I do is............
Bring Striper from beach to beach house. head it, tail it and gut it. stuff with vegetables and chourico. pat dry skin and wrap tightly in tinfoil. lay on grill (the fish not you). When done, peel the tinfoil back and the skin will come with it.
DIG IN !!!!!
Serve with a cooler full.

make a tempura batter out of bisquick and add some(very little) adobo sesoning. cut bass into chunks and pat dry. coat very very lightly with corn starch and dip into batter, and then right into deep fryer till golden brown. trust me, arthur treachers has nothing on this

Damn Oats, That sounds great. Its kind of hard to deep fry anything at the beach house (no electricity, all gas) but that may be my new favorite way to cook fish at home.
I'm Italian, My wifes lucky i don't make a sauce with my stripers.

I read the other day that if you leave bluefish in milk over night before you cook it ,it takes the oil out of the fish. :?:

Now this is only one mans opinion but............
I heard the "milk" way....i've heard the smoked way.....i've heard so many ways to prepare Bluefish that it would make your head spin.'
I've never tried it myself nor will i probably ever taste it. the way i figure it, if it takes so many ways to take the bad taste out of Bluefish, why bother?
with stripers its...cook, eat and repeat.
Seriously, you want to know what i do with the Blues? i give them to my Pourtugese neighbors, seems they love them and they make the old ladies clean them.

I have the absolute best Bluefish recipe. I trade them stinkin' bastages with the Lobstermen. They get bait, I get Lobsta. Can you beat that?
