Morty for most applications 2 to 8 ounces will hold you in good stead.
It is dependent on the current or the velocity of the moving water.
Sometimes its almost unfishable but thats for another discussion.
When you have a moderate lets say beach front surf situation and the tide is near the bottom or top - 3 ounces may hold nicely without your entire rig tumbling back towards the shoreline. The current speed will change during the tide and you may have to add more weight. The speed of the current accelerates faster around mid tide. A lot of factors are determining the speed of the current. Rip formations, water volume, rain weather, moon phase, etc. So as not to get too hung up on technicalities, use what will hold bottom without getting tossed around or hung up. Generally I use 3 to 4 ounces if I'm using bait. I also use a sinkerslide, (aka fishfinder). This affords the fish a pickup and run off before he feels the weight of the sinker.
You need enough weight to hold the sinker in the sand without moving. Some use 8 ounces and nothing else. The reason being is that the fish will hook itself just from the resistance on the weight.
On a boat the current can be so fast that you might need as much as 24 ounces to hold bottom.
