Trout Again so Let's Cook'em

My son Ben just arrived home from the oil fields. Kept two silver beauties for supper, will post recipe for "any fish will do" works great with salmon,trout or striper really seals in the juices.INGREDIENTS: Fish fillets(skin removed), 1/3 cup of dry breadcrumbs, 2 tbsp grated parmesan cheese, 1 tbsp fresh lemon juice, 1 tbsp melted butter, 1 tsp lemon zest, 2 cloves of garlic(finely minced), 1/4 tsp salt, 1/4 tsp black pepper(fresh ground) may have to double depends on size of fillets.METHOD: Pre-heat oven to 425F, place fillets on lightly oiled (pam) baking sheet, mix all ingredients and cover top of fish fillets with it, press lightly. Bake on top rack for 15-25 mins depends on thickness of fillets.
