Ceviche from grocery store fish?

Would it be safe to use the store bought fish that has been sitting out?

Never a good idea to use display case fish for raw or even ceviche you never quite know who thats been handled along the line or how long it's been sitting out. Even though ceviche is considered a form of cooking the meat it will not kill most of the bacteria so starting with super fresh is paramount. I would suggest going to a local fish pound that has been in business for a long time. hope that helps you.....

I have been a professional cook for 20 years and I never, EVAR buy fish at a grocerey store.

Fish comes from a fish market
Meat comes from a butcher
Bread comes from a bakerey
Produce comes from the produce market

Shopping this way is cheaper, healthier and supports educated mom and pop stores.
