Tried this recipe today and it came out really good. It works well with any "white meat" type fillet.
Big piece of tin foil
plop a lot
of baby spinach in the middle (the spinach really reduces a lot)
Fish on the top of the spinach
season the fish with fresh ginger, garlic, salt, pepper, and then drizzle with soy sauce, sesame oil, white wine, and olive oil.
fold tin foil and twist the ends (to seal it)
cook on grill at 400 degrees for 10 to 15 minutes
garnish with fresh basil and squeeze lemon on it
I sprinkled some lemon pepper on it also.
