the one that truly works is a bowl of ice cold water with some ice. mix in a couple of capfulls of vinegar and place the fish in this for a few minutes. i am no fan of bleaching fish meat overnight. if it isn;t ready to eat fresh out of the water then it;s a crap fish. the only reason to masserate or soak fish overnight is that it wasn;t immediately cut to filet and the blood pumped throughout it;s flesh. bluefish has to be cut up immediately to attain it;s optimum freshness and keep it from spoiling (which is what happens to it if you wait too long to filet it - not spoiled as it is inedible, just the taste gets fishy)
