Default Nw to Az fishing

Bought a new home in Goodyear, Az and am here from Nov thru May, before I return to the NW for salmon fishing. I am going on my first Striper trip to Lake Pleasant on Thursday with 2 other guys, who have never fished stripers. I have 4 trays of small herring from the NW and need to know how to rig for them. Up in the Umpqua we used to rig with a 2-4 oz weight and a 3 hook mooching rig with plug cut herring bouncing them on the bottom. Since this was in a river, do not know what to do in a lake. Any help would be appreciated.

I fish with a Buzz Ramsey 15-50 and a Shimono Calcutta LC500 with 50# braid for salmon and is all I have with me this trip. I also have a 21 foot Hewescraft with two honda 4 stroke motors. I am interested in learning Az fishing and willing to trade trips for salmon trips on the Columbia River in August and Sept when I can guarantee salmon hookups.
